Chili
Ingredients
1 pound ground beef
1 (15.5 oz) can kidney beans
1 (15.5 oz) can chopped tomatoes
1 (6 oz) can tomato paste
1 cup beef broth
1 small or ½ medium white or yellow onion
2 cloves garlic
½ red bell pepper
½ jalapeno pepper (or to taste)
3 green top onions
2 tsp cumin
1 tsp smoked paprika
1 tsp chili powder
salt and pepper to taste
Brown ground beef; add chopped onions, garlic, and peppers. cook until vegetables are fragrant and translucent. Add beans and chopped tomatoes. Add spices. Add beef broth. Add tomato paste till color is right, usually about ¾ can. Top with green onions; add sour cream and cheese for added taste and fun!
Notes:
The tomato paste adds both taste and color to your chili. I add it until I get the color I want, usually 4-5 ounces. I like the little bit of texture and color the fresh red pepper brings to the dish - during harvest season I usually have more than one variety of red pepper and it’s a great way to use them!
