Grilled Herbed Pork Chops
Ingredients
4 thick-cut pork chops
Marinade:
1 tbsp fresh black pepper
1 tbsp kosher salt
1 tbsp fresh thyme, finely chopped
1 tbsp fresh rosemary, finely chopped
1 tbsp fresh sage, finely chopped
4 cloves garlic, smashed and finely chopped
1 tbsp fennel seeds, roughly chopped
1/8 cup olive oil
½ tsp lemon zest
Juice of ½ lemon
Directions
Preheat grill.
Prepare marinade, starting with 1/8 cup olive oil in a small bowl. Add black pepper, salt, thyme, rosemary, sage, garlic, fennel, and lemon zest. Mix well. Rub marinade into both sides of each pork chop. Cover and let sit at room temperature for 30 minutes.
Place on grill and cook 5-6 minutes each side, until internal temperature reaches 145 degrees.
Serve with grilled vegetables.
