Meatloaf
1 pound ground beef
1 pound ground Italian sausage
½ cup cheddar cheese
2 tbs olive oil
½ onion, chopped
½ red pepper, chopped
2 cloves garlic, minced.
½ tablespoon fresh chopped thyme or 1 dry tablespoon
½ tablespoon fresh chopped rosemary or 1 dry tablespoon
½ tablespoon fresh chopped sage 1 dry tablespoon
1 tsp garlic powder
1 tsp onion powder
1 tsp salt, more to taste
1 tsp pepper, more to taste
¼ cup barbeque sauce
Directions
Preheat oven to 375 degrees.
Add olive oil to sauté pan. Add onion, red pepper, thyme, rosemary, and sage to the pan and sauté on low heat until onion and pepper is translucent and the herbs are fragrant. Add garlic and sauté for another minute. Remove from heat and set aside.
Mix ground beef, ground Italian sausage, cheese, garlic and onion powder, cooled onion-pepper-herb mixture, and barbeque sauce to large mixing bowl. Mix ingredients by hand till well blended. Place the mixture in a 4x8 loaf pan. Press down to get the mixture into the corners of the pan.
Bake at 375 for forty-five to fifty minutes.
I like to change things up occasionally, so this time I used green top onions. Putting the fresh herbs in with the garlic right at the end smells great and I think it gives the herbs more punch!
