The Best Nachos Ever!

 

Ingredients

1 pound ground beef

2 tsp cumin powder

1 ½ tsp smoked paprika.

1 tsp chili powder

(you may substitute 1 tbsp taco seasoning for the above spices)

½ cup water

2 cups grated Colby-jack cheese.

1 15 oz can black beans

½ c guacamole (see my recipe here)

4 oz sour cream

4 oz salsa of your choice

2 green-top onions, chopped.

1 16 oz bag tortilla chips (or more if you like!)

 

Instructions

Preheat oven to 350 degrees.

Brown ground beef; salt and pepper to taste. Add spices and water and cook down until water is gone and meat is coated with the spices.

In a large baking dish, put down a thick layer of tortilla chips, then layer on ground beef, cheese, and black beans. Repeat layers three times, saving chips to dip with. Put the remaining cheese on the top layer, making sure to spread it evenly across all the chips.

Put loaded baking dish in the oven for 5-6 minutes, until cheese is thoroughly melted. Add dollops of guacamole, sour cream, and salsa. Top with green onions. Serve with additional chips.
